Delicious Dip Recipes
Dip recipes with crudites, bread sticks, tortilla chips etc. are very appetizing for your guests to nibble on while waiting for the main part of the meal see. Most take very little time to prepare especially if you have a food processor and can be prepared in advance and kept chilled until required.

Red Devilled Dip
Ingredients - Serves 4
425g/15oz can red kidney beans,drained
1 tbsp tomato puree (paste)
1 tsp soy sauce
1 tsp lemon juice
few drops Tabasco sauce
salt and pepper to taste
paprika
1. Put all ingredients into a blender or food processor and puree for 2-3 mins. until the mixture is smooth. Moisten with a little vegetable stock if necessary. Turn into a bowl and chill.
Garnish with paprika and serve with tortilla chips.
Baked Bean Dip
Ingredients - Serves 4
400g/14oz can baked beans
100g/4oz/ 1 cup Cheddar cheese, grated
50g/2oz/1 cup breadcrumbs
1 tsp yeast extract
1 tsp dried mixed herbs
salt and pepper to taste
1. Place all ingredients in a blender or processor and blend for 1 1/2 mins. Turn into a bowl and chill until required. Serve with vegetable crudites.
Hummus
Ingredients - Serves 4
400g/14oz can chickpeas, drained and rinsed
1 garlic clove, crushed to a paste with 1/4 tsp salt
3-4 tbsp tahini paste
2-4 tbsp lemon juice
1/4 tsp ground cumin
extra virgin olive oil for thinning
salt to taste
1. Put drained chickpeas into a food processor, add the garlic and process to a thick course paste.
2. Add 3 tbsp of the tahini paste and process again until blended.
3. Add 2 tbps of lemon juice, cumin and salt to taste and process until creamy. Taste and add extra tahini paste and /or lemon juice, if desired.
4. For a thinner dip, with the motor running, drizzle in oil or water until you reach the desired consistency.
Tomato Chilli Salsa
Ingredients - Serves 4
1 shallot or small onion
2 garlic cloves, peeled
handful fresh basil leaves
500g/1 1/4 ripe tomatoes or 400g/14oz can of plum tomatoes
2 tsp olive oil
2 green chillis
salt and pepper
1. Place the shallot or onion, garlic and fresh basil in a food processor Process until finely chopped.
2. Halve the tomatoes and place in the food processor ( or whole can of tomatoes if using). Pulse the machine until mixture is well blended and coursely chopped>
3. with the motor running, slowly pour in the olive oil. Add salt and pepper to taste.
4. Halve the chillies lengthways and remove the seeds. Finely slice the chillies width ways into tiny strips and stir into the tomato salsa.
serve this dip recipe at room temperature
