Fabulous Fish Recipes
Try these fish recipes which taste wonderful cooked on the barbecue, oily fish is especially suitable for barbecuing because the flesh does not dry out over the direct heat, go ahead. Tuna steaks are lovely char-grilled and salmon is great on skewers.

Char-Grilled Tuna Steaks
Tuna has a good meaty texture but if you can't obtain it, use swordfish steaks instead.
Ingredients - Serves 4
4 tuna steaks
3 tbsp soy sauce
1 tbsp Worcestershire sauce
1 tbsp wholegrain mustard
1 tsp caster(superfine) suger
1 tbsp sunflower oil
1. Place tuna steaks in a shallow dish
2. Mix together the soy sauce, mustard, sugar and oil in a small bowl. Pour the marinade over the steaks,turn steaks and make sure they are well covered by the marinade
3. Cover and place steaks in the refrigerator and leave for between 30 mins. and 2 hours max. as if left longer the soy sauce will dry out the steaks and they will become tough.
4. Barbecue the fish for 10-15 mins. basting and turning once.
To serve, garnish with lemon wedges and parsley.
Sardines Med-style
These sardines can be cooked on a hinged rack which makes turning them easy, to turn, they will bring back memories of holidays in the Mediterranean!
Ingredients - Serves 4
8-12 sardines
8-12 sprigs fresh thyme
3 tbsp lemon juice
3 tbsp olive oil
salt and pepper
1. Clean and gut fish, unless gutted already
2. Remove the scales from the fish by rubbing the back of a knife from head to tail along the body> Wash and pat dry on kitchen paper>
3. Tuck a sprig of fresh thyme into the body of each sardine
4. Transfer the sardines to a large non-metallic dish and season with salt and pepper.
5. Beat together the lemon juice and oil in a bowl and pour the mixture over the sardines. Leave to marinate in the regrigerator for about 30 mins.
6. Remove sardines from the marinade and barbecue them for 3-4 mins. each side basting frequently with the remaining marinade
Serve garnished with lemon wedges, tomato slices and fresh herbs.
Salmon Kebabs
These have a lovely summery flavour and are so tasty with the fresh tomato sauce>
Ingredients Serves - 4
450g/1lb salmon, skinned and cut into large chunks
1 tbsp cornflour(cornstarch)
1/2 tsp salt
1/2 tsp pepper
1 small egg white, beaten
1 red (bell) pepper, deseeded and cut into chunks
1 green (bell) pepper, deseeded and cut into chunks.
4 tbsp olive oil
1. Place salmon in a shallow dish and sprinke over cornflour(cornstarch) and salt and pepper. Add the beaten egg white and toss well to coat. Leave to chill for 15 mins.
2. Thread salmon pieces onto four skewers, alternating the fish pieces with the chunks of red and green peppers. Set aside while you make the sauce.

Ingredients
4 tomatoes,deseeded and quartered
1/4 cucumber, peeled, deseeded and chopped
8 basil leaves
6 tbsp olive oil
2 tbsp lemon juice
salt and pepper
1. Place all ingredients in a food processor and chop coarsely, or chop the tomatoes, cucumber, basil leaves by hand and mix with the oil, lemon juice and seasoning. Leave to chill.
2. Barbecue salmon for about 10 mins. basting with the olive oil to keep them moist.
Serve on toasted ciabatta spread with the tomato sauce and topped with the salmon.
